Honey Garlic Sausage & Vegie Stir Fry

INGREDIENTS

Cooked Sausage
Bell Peppers
Zucchini
Celery
Yellow Onions
Garlic
Canned Black Beans
Canned Corn
Soya Sauce
Honey Garlic Sauce
Sambal Oelek
Sesame Oil
Sea Salt
Chili Powder
Red Pepper Flakes

INSTRUCTIONS

STEP 1: Slice your cooked sausage into pieces. *Tip* If you'd like, substitute the sausage with a different protein or remove it completely and only have vegetables! This is the perfect recipe to use up those veggies in the fridge.

STEP 2: Prepare vegetables: wash and dice the bell peppers, zucchini, celery, and yellow onions. Peel the garlic. Open, rinse, and drain the cans of black beans and corn.

STEP 3: Turn on the stove to medium-high and heat your pan. Add sesame oil and let it also heat up.

STEP 4: Add onions and sauté in the pan. Add minced garlic and celery once the onions have started to brown followed by some Sambal Oelek.

STEP 5: Add soya sauce to the pan. Add the bell peppers and sauté for a few minutes followed by the zucchini. *Tip* Think about which vegetables cook more quickly and add them in later to avoid them overcooking and getting soggy.

STEP 6: Season with sea salt, chilli powder, and red pepper flakes. Mix all together.

STEP 7: Add cooked sausage and honey garlic sauce and mix well ensuring everything in the pan is coated. Let it simmer for a few minutes.

STEP 8: Add canned black beans and corn. Add additional seasonings and honey garlic sauce if necessary. Mix all together but be careful not to mash the beans and corn. Let it simmer for a few final minutes.

STEP 9: Eat and enjoy!
