Lentil Soup

Here is Recipe #15! This one is inspired by https://www.noracooks.com/vegan-lentil-soup. Remember: these ingredients and instructions are suggestions. I encourage you to be creative, use what you have, and make the adjustments that make sense for you. Measurements not included because I don't measure. 😍

INGREDIENTS

Brown Lentils
Carrots
Yellow Onions
Tomatoes
Garlic
Olive Oil
Cilantro
Turmeric
Coriander
Cumin
Pepper Sauce
Black Pepper
Sea Salt

INSTRUCTIONS

STEP 1: Pour the lentils in a colander/strainer and rinse well. *Tip* Make the sure the holes are small enough so that the lentils don't fall through lol

STEP 2: Add lentils to a bowl and cover with fresh water. Put aside to soak. I left them overnight but I don't know if this is necessary or how long is best.

STEP 3: Prepare your vegetables. Finely dice carrots, tomatoes, and onions.

STEP 4: Boil a full kettle.

STEP 5: Heat up a pot. Add a splash of olive oil.

STEP 6: Sauté onions in the oil and add some minced garlic. Make sure to save a few cloves for later.

STEP 7: Add the carrots and cook for a few minutes.

STEP 8: Add the tomatoes and cook for a few minutes.

STEP 9: Add some coriander, cumin, turmeric, black pepper, and sea salt to the vegetables. Mix together well.

STEP 10: Add lentils and stir into the mixture.

STEP 11: Add vegetable stock and hot water. Mix together as it comes to a boil.

STEP 12: Turn down the temperature and cover the pot. Let it simmer.

STEP 13: Taste test and add more spices and/or hot water as needed. Continue to stir ensuring it doesn't stick to the bottom of the pan and burn.

STEP 14: Add pepper sauce and the rest of the minced garlic. Mix together.

STEP 15: Cook until lentils are tender and the soup is of your preferred consistency.

STEP 16: Serve and garnish with fresh cilantro.

STEP 17: Eat and enjoy!
