Roasted Pork Loin & Sweet Potato Bowl

INGREDIENTS
Cooked Pork Loin
Sweet Potatoes
Arugula
Avocado
Olive Oil
Greek Yogurt
Lemon Juice
Garlic
Black Pepper
Sea Salt
INSTRUCTIONS
STEP 1: Preheat oven to 425°F.
STEP 2: Wash sweet potatoes and arugula. Put arugula aside to drain.
STEP 3: Slice sweet potatoes and put them on a baking tray.
STEP 4: Drizzle olive oil and sea salt on the potatoes and mix together with your hands ensuring the sweet potatoes are evenly coated.
STEP 5: Put baking tray in oven once preheated. Roast sweet potatoes for approximately 30 minutes, flipping them halfway.
STEP 6: Slice cooked pork loin into pieces and put aside. Do the same for the avocado
STEP 7: Prepare the dressing. Add Greek yogurt to a bowl. Mince the garlic and add it to the yogurt along with olive oil, lemon juice, black pepper, and sea salt. Whisk together until smooth. Taste test to see if you need to add extra of anything.
STEP 8: Reheat the pork loin and then remove the sweet potatoes from the oven.
STEP 9: In a separate bowl, add the pork loin, followed by sweet potatoes and arugula.
STEP 10: Garnish with avocado, the homemade dressing, and fresh black pepper.
STEP 11: Eat and enjoy!
