Spicy Baked Basa With Tomatoes

INGREDIENTS
Thawed (or Fresh) Basa Fillets
Tomatoes
Olive Oil
Lemon Juice
Sambal Oelek
Ginger
Garlic
Dill
Red Pepper Flakes
Chili Powder
Black Pepper
Sea Salt
INSTRUCTIONS
STEP 1: Wash and clean the Basa fillets.
STEP 2: Arrange the fillets on a baking tray leaving a bit of space between each.
STEP 3: Sprinkle salt, black pepper, and lemon juice on the fish and let it sit while you prepare the marinade.
STEP 4: In a small bowl mix together the olive oil, Sambal Oelek, grated ginger, minced garlic, chili powder, red pepper flakes, and tomatoes. *Tip* I used the remainder of a leftover can of whole tomatoes which worked well. Canned or fresh tomatoes in any form (crushed, diced, pureed etc) are other good options.
STEP 5: Cover each side of the fish with the marinade ensuring it is well coated. Let it sit.
STEP 6: Preheat the oven to 400°F.
STEP 7: Bake fillets until they are flaky. It should not take more than 15 minutes but also depends on your oven, the thiccness of the fillets etc.
STEP 8: Garnish with fresh dill.
STEP 9: Eat and enjoy!
