Roasted Butternut Squash & Carrot Soup

INGREDIENTS

Butternut Squash
Carrots
Coconut Milk
Hot Water
Olive Oil
Ginger
Garlic
Yellow Onions
Curry Powder
Turmeric
Chili Powder
Black Pepper
Sea Salt

INSTRUCTIONS

STEP 1: Wash butternut squash and carrots. Set aside to drain.

STEP 2: Prepare vegetables: peel garlic and onions. Cut onions and butternut squash into big pieces. *Tip* I prefer to keep the skin on butternut squash while roasting but you can remove. Peel carrots and also cut into big pieces.

STEP 3: Arrange the butternut squash, carrots, and onions on a baking tray. Add half of the garlic cloves and put the other half aside for later. Drizzle olive oil, curry powder, turmeric, chili powder, and sea salt on the vegetables and mix together evenly.

STEP 4: Roast vegetables at 400°F until soft enough to mash.

STEP 5: Turn on the stove and heat up a large pot. Also boil a full kettle.

STEP 6: Remove vegetables from the oven. Scoop butternut squash out of the skin if you don't want to eat it and add it to the pot. Then add the rest of the vegetables. Stir all together and start to mash.

STEP 7: Add some coconut milk and continue to stir. If you have an immersion blender, use it to purée the soup until smooth. If you have a food processor, you can use it to purée batches of the soup and then add it back to the pot.

STEP 8: Add some flavour. Start with more curry powder, turmeric, chili powder, and sea salt. *Tip* Less is best to start. Remember it's a lot easier to add flavour then remove it!

STEP 9: Mince the ginger and remaining garlic into the soup and mix together. Taste test and see if there's any flavour that's missing.

STEP 10: Add more coconut milk and/or hot water. *Tip* Hot water helps thin out soup if you don't want to add additional coconut milk which can be overpowering.

STEP 11: Let soup simmer on a low fire and stir every so often so that it doesn't burn at the bottom. STEP 12: Eat and enjoy!
